Chicken and Pasta Salad

A refreshing and satisfying salad of vegetables, pasta, and chicken along with a mustard yogurt dressing, makes it a complete meal for a healthy dinner.

Ingredients

  • 1 cup cucumber cut into cubes
  • 1 medium sized tomato de-seeded & cubed
  • ½ cup red or green apple or tinned pineapple
  • ½ cup chopped lettuce iceberg
  • ½ cup boiled pasta any shape.
  • 1 chicken boneless breast grilled with any marinade of your choice
  • 2 tablespoon chopped parsley or fresh coriander
  • 1 green chili chopped optional

For dressing:

  • 3 tablespoon mustard paste
  • 1 tablespoon dry yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon grated garlic
  • ¼ teaspoon sugar
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • ½ teaspoon pepper

Instructions

  • Combine all ingredients for salad in a glass bowl.
  • Mix together all ingredients for dressing in a separate bowl. Keep both the bowls chilled.
  • Add dressing to the salad just before serving.
