BLUEBERRY BANANA BREAD

This cake is super moist with the combination of blueberries and bananas that can be a perfect breakfast dish or can be enjoyed with evening tea.

Ingredients

  • 1 ½ cup all-purpose flour Maida
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 cup mashed bananas 2 large
  • 2 eggs
  • ¼ cup milk
  • ½ cup melted and unsalted butter
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla essence
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 180 degrees C or 350 degrees F.
  • Line a baking dish with butter paper on all sides. You can also grease the dish with butter and some all-purpose flour so that the bread comes out easily.
  • In a bowl, sift together all-purpose flour, baking soda, baking powder, salt, and cinnamon powder. Set aside.
  • Separately mash the ripe bananas and keep ready.
  • In a large mixing bowl, whisk together melted butter, sugar, milk, eggs, and vanilla essence. Beat well till the sugar melts and everything is well combined.
  • Now add mashed bananas and again mix well.
  • Then add the all-purpose flour mixture little by little and mix just till everything is combined well. Do not over mix the batter or else the bread will turn hard and dense.
  • Finally, add the blueberries and mix well.
  • Pour the bread batter into the prepared baking dish and bake for 40 minutes. Check if the bread is baked well by inserting a clean knife in the center to see if it comes out clean. If not then bake for another 5 to 10 minutes till it is baked well.
  • Remove from oven and cool on a wire rack for 15 minutes or before cutting into slices or pieces.
  • Serve warm with butter or jam.

Notes

It is an ideal breakfast option if you are in a hurry, wherein you can just grab a few slices and off to work or school. A very versatile dish which can also be an ideal lunch box option or can be enjoyed as a snack for an evening tea.
You can also use frozen blueberries as well which should be added without defrosting. You can also substitute the blueberries with raspberry too or even chocolate chip works equally well.
