Arabic style salad made with loads of parsley, fresh cucumber, and tomatoes which pairs perfectly with kababs and grills.
Tabbouleh is a middle eastern salad made of fresh parsley and soaked burghul or bulgur wheat. In some of the countries, the fine broken wheat is just soaked in boiling water for some time before adding it to the salad. Whereas in a few countries it is cooked and then added to the salad. The addition of mint leaves along with parsley gives the salad a refreshing taste.

Tabbouleh ~ Arabic Style Parsley Salad
Ingredients
- 3 cups finely chopped parsley
- ½ cup burghul/bulgur wheat/fine broken wheat
- 1 large cucumber chopped
- 1 tomato chopped
- ½ cup chopped mint leaves
- 1 tablespoon lemon juice
- 1 teaspoon black pepper powder
- ½ teaspoon salt
- 2 tablespoon olive oil
Instructions
- Wash the wheat and soak in 1 cup boiling hot water for 30 minutes.
- Take a large mixing bowl and combine soaked wheat (burghul/bulgur) without water and all other ingredients mentioned above.
- Chill the salad in the refrigerator for 30 minutes to 1 hour.
- Serve chilled with kababs and pita bread.
