Grilled Mango Chicken is a healthy dinner option where chicken pieces are marinated with mango, lemon, and other spices making it delicious.
Grilled Mango Chicken is a pleasant twist from the usual grilled chicken where mango pulp has been infused in the marinade giving it a sweet and sour flavor. For this recipe, I recommend a sour variety of mango and also which has a strong aroma and flavor.
In my home town, which is Mangalore, cooking spicy dishes with ripe mangoes is a norm. You can also find Mangaloreans having a spicy main course dish with chopped sweet mangoes as a side dish. Ripe mango curry in Mangalorean style is a finger-licking delicacy where juicy mangoes are crushed into a pulp with hand and tempered with red chilies, mustard seeds, and other aromatics.
Based on the Mangalorean cooking style with mangoes, I was inspired to come up with this Grilled Mango Chicken. Here I chose not to use much of Indian spices and use ingredients like brown sugar and soy sauce which gives a different flavor altogether as compared to the regular Indian style chicken tikka.

How to make mango Chicken without an oven?~ Stovetop cooking
You can make Grilled Mango Chicken in a saucepan too. Just marinate the chicken as mentioned in the recipe. Heat 4 to 5 tablespoon cooking oil and place the chicken pieces side by side in a wide saucepan. Cook on high heat for 1 minute, turn all the pieces and again cook on high heat. Reduce the flame, pour 1/4 cup water with chicken pieces and place the lid. Cook on medium to low flame for 20 to 25 minutes, stirring occasionally. You will notice that the meat releases a lot of moisture initially, just continue cooking until all the water has dried up and chicken is well cooked. To give a grill effect, you can fumigate the cooked mango chicken with burning coal fume for 15 minutes.

How and when to serve Grilled mango Chicken?
Mango Grilled Chicken should be served hot straight from the oven. You can serve with the mint chutney or mango dip (click to see the recipe). It can be served as a Main Course along with rice and salad. It can also be served as a side dish if it is made with boneless chicken cubes.
You can make Grilled Mango Chicken with small bite-size boneless pieces of chicken and serve as an appetizer for parties.
How to grill the chicken in the oven?
You can place the chicken either on the baking tray or on a wire rack. If you are using a wire rack, make sure to keep a tray below it to collect all the juice dripping from it. It is always better to grill the marinated chicken on a flat baking tray as it can retain all the juices and keep the chicken from drying. Whereas if you use a wire rack, the chicken pieces turn out dry and rubbery in texture.
Turn the knob to (top and bottom) or (Only top) heating at 250 degrees C. Preheat oven for 15 minutes before placing the chicken (Chicken should always go in a very hot oven).
Once the oven is very hot, keep the baking tray close to the top oven (not in the center). As soon as the chicken is placed closed to the top oven, the juices get sealed and the chicken will not be dry anymore. After 10 minutes of grilling, you can turn the chicken pieces (I do not turn the chicken pieces if the top and the bottom flame is ON).
Well marinated chicken does not take more than 20 minutes to cook. Chicken starts drying out if it is grilled more than that.

Grilled Mango Chicken
Ingredients
- 500 grams Chicken legs, thighs, boneless
- ¼ cup mango pulp/puree
- 2 teaspoon red chili powder or as per taste
- 1 teaspoon ginger & garlic paste combined
- 1 teaspoon cumin powder
- 1 teaspoon brown sugar/or grated jaggery
- 1 tablespoon soy sauce
- 1 teaspoon salt or as per taste
- 2 tablespoon lemon juice
- 2 tablespoon cooking oil
Instructions
- Marinate chicken pieces with all the ingredients and set aside for 4 hours (minimum 1 hour).
- Preheat oven to 250 degrees C with top and bottom flame on.
- Place the chicken pieces on a baking tray or a wire rack. Drizzle some cooking oil on each piece and place the rack close to the top flame.
- Grill for 20 minutes and check if the chicken is cooked. In case if the top flame is on, then turn the chicken pieces after 10 minutes of cooking.
- Remove from oven when chicken is cooked, serve hot with mint chutney, onion rings, and lemon wedges.
