Aloo Tadka is a spicy stir-fried potato which pre-boiled and the cooked along with other Indian spices, making it perfect to be served as a side dish along with dal and steamed rice.
Sometimes the most simple things in life turn out to be the most favorite things. In terms of cooking, we always like those recipes which are very easy and quick to prepare. Especially when we are really short of time and want to cook up something quick in less time. This recipe is all about that.
For me, Aloo Tadka happens to be an excellent option for my dinner parties, especially if you have someone who is a vegetarian and the rest are non-vegetarians. You will even find your non-vegetarian guest drooling over it.
Aloo Tadka can be made using Baby Potatoes as well as regular size medium or large potatoes. It is very important to prick the baby potatoes so that it absorbs all the spices and masala.
Aloo Tadka
Ingredients
- 3 medium sized potatoes
- 1 tsp cumin seeds
- 1 tsp red chilli powder
- 1 tbsp crushed coriander seeds
- 1 tsp roasted cumin powder
- ½ tsp amchur powder dry mango powder
- Salt to taste
- 1 tsp sugar
- 4 to 5 tbsp oil
- 2 tbsp chopped coriander leaves
Instructions
- Boil potatoes along with skin till 90 % cooked. Take care not to over boil it. Peel and cut into cubes.
- Heat oil in a thick bottom or any non-stick wok. Add cumin seeds and fry till they slightly change colour.
- Now add salt. This will prevent the potatoes from sticking to the wok. Along with salt add red chili powder, crushed coriander, roasted cumin powder, sugar, and amchur powder.
- Now add the potatoes and stir carefully until fully coated with the spices. You can sprinkle some water in case if the whole thing becomes dry and is sticking to the wok.
- Check the seasoning and adjust accordingly.
- Finally, add chopped coriander leaves and serve hot.
