For a soft texture kabab, always use the piece from the thigh or legs instead of the breast piece. This portion of chicken contains more fat content.

You can make your own mince by adding the boneless pieces to a chopper and chop until you get a minced texture.

 

Kabab mix
Gently mix all the ingredients until the kabab mixture is well combined. This will take at least 5 minutes of kneading the mixture.
Marinate
It is always better to marinate the kabab mixture in a refrigerator. This helps in infusing the flavors into the meat and it is also easy to shape the kabab when it is chilled.

Fry kababs
For a juicier kabab, do not over fry or cook the kababs. Mince kababs when shaped flat and round cook much faster. Just 5 to 7 minutes on each side is more than enough.

This is a no-garlic dip with a hint of sweetness from honey and spicy and tangy at the same time.

You will love your kababs if you dunk them in this creamy flavorsome dip.

Ingredients

  • 3 tbsp yogurt
  • 1 tbsp mayonnaise
  • 1/2 tsp black pepper powder
  • 1 tsp red chili flakes
  • 1/4 tsp salt
  • 1 tsp oregano
  • 1 tbsp lemon juice
  • 1 tbsp honey

Mix well in a bowl and serve with kababs

Ingredients
  

  • 500 grams chicken mince from thighs & legs
  • 1 small onion chopped
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped ginger
  • 2 green chilies chopped
  • 1 teaspoon red chili flakes
  • ½ teaspoon pepper powder
  • 2 tablespoons lemon juice
  • 1 ½ teaspoon salt
  • ½ cup breadcrumbs
  • ¼ cup chopped coriander leaves
  • 1 egg
  • 5 tablespoon cooking oil

Instructions
 

  • In a large mixing bowl, mix together the chicken mince, ginger, garlic, green chilies, chopped coriander, bread crumbs, egg, salt, black pepper, red chili flakes, and lemon juice.
  • Mix and knead the mixture for 5 minutes or until all the ingredients are well combined.
  • Set aside the kabab mixture in the refrigerator for 1 hour.
  • Take 2 tablespoons of the mixture and shape it into flat kababs.
  • Heat 2 to 3 tablespoons of cooking oil in a non-stick pan for 5 minutes on slow flame. Now add a few kababs at a time and shallow fry in small batches.
  • Fry on medium to low flame for 5 to 7 minutes on one side and then gently flip over and cook on the other side as well.
  • Serve hot with dip and salad.

Notes

Prepare chicken mince by adding the boneless chicken cubes to a mixer jar. do not overload, just add a few pieces at a time. Grind to mince by only using the pulse button. Do not grind the meat too fine.
