Boondi raita is the most sought-after raitas in Indian cuisine. During the summer season, raita is a staple in almost every home. A biryani or kabab is always incomplete without this refreshing salad.
What is Boondi?
Boondis are crispy deep-fried tiny balls made with chickpea flour batter. This can either be prepared at home or can be bought from a store. Buying readymade boondi of a good brand can save a lot of time.
Step by step method of making a perfect Boondi Raita
Boondi Raita is made either with homemade boondis or with store-bought ones. Both versions are equally delicious. However, the store-bought or readymade boondis save a lot of time and makes the process easier.
- The first step is to soak the boondis just like how vadas are soaked for making Dahi vada.
- Prepare the yogurt with all the spices and other chopped ingredients. Read more in the recipe card below.

Equipment
- Mixing Bowl
Ingredients
- 1 cup boondi
- 1 onion finely chopped
- ½ cup coriander leaves finely chopped
- 1 green chili finely chopped
For Spicy Yogurt
- 2 cups yogurt
- ¼ teaspoon red chili powder
- ¼ teaspoon cumin powder
- ¼ teaspoon black pepper powder
- ½ teaspoon chat masala powder
- ½ teaspoon salt
- ½ cup water
Instructions
For Boondi
- Soak boondi in hot water for 15 minutes.1 cup boondi
- After 15 minutes, strain the boondi, squeeze and discard all the water. The boondi should be well soaked and soft.
For spicy yogurt
- In a mixing bowl add all the ingredients and mix well. The consistency should be flowy and not very thick.2 cups yogurt, ¼ teaspoon red chili powder, ¼ teaspoon cumin powder, ¼ teaspoon black pepper powder, ½ teaspoon chat masala powder, ½ cup water, ½ teaspoon salt
- Now add chopped onion, coriander leaves, green chilies and soaked boondi. Mix well and serve chilled.1 onion, 1 green chili, ½ cup coriander leaves
