Green Chutney is a spicy herb based Indian style sauce used for making chats. It is also know as Teekhi Hari chutney in the local language. This sauce goes as a topping on all the street style chats.
Green chutney is the most effortless chutney you can ever make. Therefore, I make this chutney and the Tamarind Chutney once in a week and store it in a glass air-tight container. This green chutney for chats is so versatile, that it does not last for more than a week.
It is not that I make chats every single day, but Teekhi chutney is definitely a sauce that can be used for Sandwiches. Spreading Green chutney on one of the bread slices gives it a nice flavor especially if you are making a Bombay style grilled vegetable sandwich.
Teekhi Chutney for chats can also be used as a dip for samosas and pakoras. In addition to dips and spreads, you can make a chutney flavored mayo too. Take a cup of mayonnaise in a bowl and add 2 or 3 teaspoons of chutney to it. Mix well and use it as a dip for french fries.
Ingredients of Teekhi Chutney For Chats ~ Indian Style Spicy Green Chutney
The main ingredients for this chutney are coriander and mint leaves. Make sure to use fresh leaves that have to be washed and dried well. Instead of mentioning bunch, I would suggest that you chop the leaves and measure it according to a cup. There is no fixed quantity with regards to the herbs.
Green chilies come in various spice levels. Therefore, add green chilies according to their spice level.
For the sourness, you can either use tamarind water or lemon juice, both work well. However, tamarind water gives a better flavor.
Ginger and garlic should be freshly chopped. Therefore, avoid using ginger and garlic paste.
The dal used in this recipe is a snack-type chana dal. This is not a raw lentil, but a toasted one that is used for snacking purposes. You can substitute this dal with bread slices too.
