I am back to my routine of blogging after I have successfully completed the 31 Day Blogging Challenge in the month of January. So I decided to start this month with a guest post, the reason being, that it will be a pleasant change to see a recipe from a different blogger after going through 31 back-to-back recipes from me…fair enough.

So my special guest blogger for today is Shazia who blogs at Fromykitchen. I am a big fan of her baking skills and you can find the most sophisticated as well as easy baking recipes on her blog. Recently she has started doing cooking videos which are so helpful, especially for a recipe like this one. You can find beautiful clicks with very well-explained recipes on her blog. A special recipe for a special person! I’m truly super happy today as this is a guest post for the famous blogger and Youtuber Shanaz Rafiq. When she approached me asking for a guest post I was dancing with joy! Got to meet some really awesome people throughout my blogging journey and one such person is you Shanaz! Her youtube videos are my favorite, the focus is directly on the food, not much fancy, yet eye-catchy. She helped me in focusing and positioning the tripod while taking a video. I’m heading to baby steps in making videos, no tension when there are people like you around us! hehe! Thank you for being you! 

 

Now a little about myself-I’m Shazia who blogs at Fromykitchen, currently residing in Saudi Arabia with my family. I started my blog just to archive my recipes and with the intention to share them with the passionate foodies! Now blogging is my passion and it is something that I’m enjoying the most! Since I was a kid, I used to admire my mom brewing magic in the kitchen and that’s where I gained my inspiration! I love to explore new cuisine and experiment with them in my kitchen! Frankly speaking, I was a bit nervous too, when she asked me to do a guest post because shanaz’s blog is loaded with a variety of recipes. Was fully confused about what should I contribute to her space, and when I asked her she said anything simple and the one in your draft will work too! But I want something special so selected this French dessert PARIS BREST.

A French dessert, made of choux pastry and a praline flavored cream.

Ingredients
  

  • ½ cup milk
  • ½ cup water
  • 100 grams butter
  • 1 cup flour
  • 2 tablespoon sugar
  • 1 teaspoon vanilla essence
  • 4 eggs

For Praline Cream:

  • ½ cup toasted almonds
  • ½ cup toasted hazelnuts
  • ½ cup sugar
  • 2 tablespoon butter
  • 1 ½ cup whipping cream
  • 5 tablespoon icing sugar

Instructions
 

  • Place the butter, milk, water, and sugar in a saucepan over medium heat and bring to a boil, with a spatula, quickly stir in the flour over medium-low heat and stir constantly until the dough comes away from the sides of the pan and forms a smooth ball.
  • Transfer the dough to a large bowl, once the dough is warm beat on low speed for a minute to release the steam from the dough. Then start adding the eggs one by one and continue to mix until you have a smooth thick shiny paste. You will notice that the dough will separate and then come together. Continue to mix until you have a smooth thick paste.
  • Transfer the dough to a large piping bag. Pipe 1-inch thick ring of dough inside the 8 inches that is drawn on the parchment paper. Pipe another 1-inch thick ring inside the first ring, make sure the ring is touching. Pipe the final ring of dough on top, along with the center seam between the first two rings of dough.
  • Egg wash the pastry and sprinkle the almond flakes on top. Bake for 15 minutes and then reduce the oven temperature to 180 degrees, bake for another 40-45 minutes or until the choux pastry is a golden brown color, puffed, and crisp. Don’t open the oven door while the choux pastry bakes or it might deflate. Turn the oven off, leave the oven door slightly open, and leave the pastry in the oven so the shell can further dry out (about 30-minutes). Remove from oven and cool on a wire rack.
  • For Praline Paste: In a small saucepan heat sugar and water over medium-high heat until it turns golden brown. Add butter and mix well, then stir in nuts to coat with the caramel and transfer the praline to a baking sheet to cool completely.
  • Break the praline into smaller pieces.
  • Grind in a food processor until it gets into a thick paste, for about 10 minutes.
  • For Praline Cream: Whip the cream and icing sugar, when it forms soft peaks add in the praline paste and beat until thick. Don’t overbeat it.
  • Assembling: Cut the pastry in half and pipe the cream onto the pastry and close it. Sprinkle the powdered sugar and serve.
