Vegetable Sandwich | Carrot & Capsicum Sandwich

 

The moment we hear the word ‘sandwich’ there is a peculiar kind of curiosity as to what is the stuffing in it. Sandwiches are more popular during a lunch break in school and colleges, and the moment the lunch box is opened, all eyes start peeping into each other’s boxes. The tastiest sandwiches are then shared by all the friends. There can be an infinite number of stuffing that can be used for making sandwiches be it sweet or savory.

This sandwich is a quick fix and can be made with your choice of vegetables or even with what is available in your refrigerator. I like to prepare the stuffing the previous night so that the mornings can be much easier. If feeding vegetables to kids is a challenge, then using veggies as stuffing can be a good and healthy option.

Vegetable Sandwich | Carrot & Capsicum Sandwich

A sandwich made with a spicy preparation of cooked carrot and capsicum stuffing along with some cheese and fresh vegetables.

Ingredients
  

  • 1 large carrot julienned
  • 1 capsicum sliced
  • 1 medium onion sliced
  • ½ teaspoon ginger & garlic paste
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • ½ teaspoon pepper powder
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 4 tablespoon oil

Instructions
 

For Vegetable Stuffing:

  • Heat oil in a saucepan and saute chopped onion until soft. Then add ginger & garlic paste, red chili powder, turmeric powder, cumin powder, and fry on low flame for 3 or 4 minutes or till the raw smell disappears. Now add carrot, capsicum, salt, black pepper powder, and lemon juice. Cook on medium heat till vegetables are just cooked. Turn off the heat and make sure that the vegetable mixture is dry. Set aside to cool.

For Sandwich

  • Take a slice of bread and spread 1 teaspoon or less mayonnaise. Spread 1 tablespoon of vegetable mixture and arrange tomato, capsicum, or any vegetables of your choice. Sprinkle chopped jalapeno. Place a slice of cheese on top and place a slice of bread on top. Apply butter over the sandwich and toast the sandwich on a grill pan or a non-stick pan. Serve hot and crispy.
