The moment I took a bite of Peruvian Grilled Chicken, it reminded me so much of the Nandos Chicken which I had as my last birthday treat with my family. It also stands close to the Peri Peri Grilled Chicken which I had posted long back.
Peruvian Cuisine – Apart from taking inspiration from Incas, Peruvian Cuisine is highly influenced by Italy, Spain, Japan, and China. The ingredient which dominates the most is the red chili pepper. Basting the chicken with marinade while cooking is what makes it different from other grilled kababs. And also it is very important to marinate the chicken for at least 1 hour and more the better.
Peruvian Grilled Chicken is the best option in case you are bored of the usual chicken tikka in Indian style. I like the mild sweetness from brown sugar along with the heat from peppers and the piquant flavor of Asian ingredients. It can be served with any flavored rice, or as a stuffing for sandwiches and wraps, the choice is all yours.
Peruvian Grilled Chicken
Ingredients
- 500 grams boneless chicken cut into cubes
- 4 tbsp cooking oil
- ½ cup chopped coriander leaves for garnishing
- 1 tsp red chili flakes for garnishing
For Marinade:
- 1 tablespoon grated ginger
- 1 tablespoon grated garlic
- 1 teaspoon red chili powder
- 1 teaspoon red chili flakes
- 1 teaspoon paprika
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar light
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 teaspoon salt
Instructions
- Mix all the ingredients for the marinade in a glass bowl. Reserve 4 tablespoons of marinade for later use.
- Marinate the chicken for 1 hour ( or up to 4 hours).
- Heat oil in a grill pan or any non-stick pan.
- Place the marinated chicken pieces and grill on all sides till cooked (10 minutes on each side). While the chicken pieces are still cooking in the pan, pour the remaining marinade and cook for a couple of minutes.
- Remove from heat and serve hot with steamed rice or as a stuffing for the wrap or sandwich.
