By looking at these pictures, it might look like a basic hummus recipe, but in reality, it is olive-flavored hummus. Hummus, by any means, does not need any introduction as it is a world-famous dish and now it is so sought after that it comes in tons of flavors. Olive Hummus is one such version of flavored hummus.
I wanted this to be a chunky kind of hummus, so instead of grinding all the ingredients together, I chose to grind basic hummus ingredients first and then blitzed the chopped olives a bit to get the flavor as well as the crunch. You can easily get that slightly bitter and salty flavor from olives combined with the creamy taste of hummus which balances the overall taste. It can be a good option if you are looking for a change in taste of usual hummus.
Green Olive Hummus
Ingredients
- 2 cup boiled chickpeas
- 3 tablespoon tahini *sesame paste
- 2 cloves of garlic
- ¾ cup chopped green olives
- ½ teaspoon red chili powder
- ¼ teaspoon cumin powder
- 2 tablespoon lemon juice
- 3 tablespoon olive oil
- 1 tablespoon olive oil for garnishing
- ¼ cup chopped parsley
- ¼ teaspoon salt
Instructions
- In a chopper add boiled chickpeas, tahini, garlic chopped, red chili powder, cumin powder, lemon juice, 3 tablespoon olive oil, salt, and grind to a smooth paste along with some water if needed. Then add chopped olives and grind again but in pulse motion for a few seconds.
- Remove in a bowl and stir in chopped parsley. Garnish the hummus by pouring some more olive oil on top along with some chopped parsley and olives.
- Serve chilled with toasted pita bread or chips.
