Easy to make toast with mixed vegetables of your choice along with some spices and cheese which is then baked to perfection.
Vegetable Cheese Toast is a very easy and versatile recipe as you are free to add any vegetables of your choice. There is no need to stick to this recipe strictly and changes can be made in the quantity of cheese and spices according to your own preference. You can even skip the mayonnaise if you like this toast to be less in calories. You can also add steamed and chopped broccoli and some corn kernels to make it more nutritious.
Vegetable and Cheese Toast
Ingredients
- 6 slices of white or brown bread
- 2 cups grated mozzarella cheese
- 2 teaspoon red chili flakes optional
- 2 teaspoon dried oregano
- ¼ cup melted butter
Mix together in a bowl:
- 1 cup grated cheddar cheese
- 1 small onion finely chopped
- 1 tomato deseeded and finely chopped
- 1 small capsicum or any other color bell pepper finely chopped
- 1 green chili finely chopped
- 2 - 3 tablespoon mayonnaise optional
- 2 teaspoon red chili sauce
Instructions
- Preheat the oven to 200 degrees C.
- Mix all the vegetable ingredients in a bowl.
- Take a slice of bread and spread the cheddar cheese and vegetable mixture evenly over it.
- Repeat the above step for all the slices and lay them on a baking tray side by side.
- Sprinkle a generous amount of mozzarella cheese over the vegetable layer along with a pinch of red chili flakes, dried oregano and, melted butter.
- Bake for 10 to 15 minutes or until the cheese has melted.
- Serve hot as breakfast or snack.
