Avocado Garden Salad

Avocado Garden Salad is a healthy and power-packed dish which has most of the superfoods. It is served with a low-calorie salad dressing which makes it ideal as a weight loss meal.
Avocado Garden Salad
A refreshing and healthy salad that is quick and easy to prepare with the creamy texture of avocado, a slight crunch from corn kernels with a super healthy dressing of olive oil and lemon juice.
Ingredients
- 1 ripe avocado peeled and chopped
- 1 cup cherry tomatoes chopped in halves
- 1 large cucumber chopped
- 3 lettuce leaves torn to bite-size pieces
- 1 small onion finely sliced
- 1 cup corn kernels cooked or tinned
- ½ cup chopped coriander leaves
For dressing:
- 1 tablespoon lemon juice
- 2 tablespoon olive oil
- ½ teaspoon grated garlic or 1/4 teaspoon garlic powder
- ½ teaspoon crushed black pepper
- ½ teaspoon paprika powder
- ¼ teaspoon salt
Instructions
- Combine all the salad ingredients in a large glass bowl and keep it refrigerated until it is served.
- In a separate bowl combine all ingredients for the salad dressing and mix well. Keep refrigerated.
- Just before serving, drizzle the salad dressing over the salad and serve chilled.
