Magic Cookie Bars

Magic Cookie Bars
A delicious layered baked cookie bar with chocolate, nuts, and coconut on a buttery biscuit crumb base. Perfect for high tea parties & picnics.
I just took the first bite and felt chocolate in my mouth…it was such a dainty feeling that I took a second bite and I felt the divine taste of coconut this time. Still, I felt there was more in it…and then I realized there were nuts too…in my third bite. Do not ask how many more bites and cookies I had, as it was hard to resist.

That evening I was at my niece’s place, where my whole family was invited to a barbecue party on her rooftop. At that time of the month, Bangalore has that bracing air and barbecue seems to be a perfect treat. All of us were busy helping her with taking dishes and some barbecue supplies from her kitchen to the rooftop. We were all curious to know what was being served as dessert for the evening…and there comes this ‘Magic Box with Magic Bars ‘. This was the first time I had tasted something like this, in fact, Magic Cookie Bar is not a rare dish and is as common as any other cookie bar. Those were gifted to her by her friend and when I asked for the recipe…it actually felt like magic.

These bars are super easy and quick to make with very few ingredients used. Again it all depends on your preference as many do not like walnuts or maybe they are allergic to it. And some may prefer a thin layer of base…so these bars can be modified according to your taste and preference.

I would suggest not to change anything here if you are preparing it for the first time as the combination of chocolate, coconut and nuts is what makes it all magical. Do give it a try as it is and then later make changes as you want.

The actual recipe for Magic Cookie Bars calls for a thick biscuit base, whereas I prefer to have a thin one as you can see in the picture. Also, you can substitute the sweetened coconut flakes with freshly grated coconut. You can also add more chocolate chips and reduce the number of nuts. In case you do not have a good quality chocolate chip, you can add chopped up a chocolate bar of your choice but make sure that chocolate should not be the top layer as it may burn much before the cookie is baked.

Equipment

  • Baking dish (9 by 13 inches)

Ingredients

  • 10 digestive biscuits
  • 80 grams melted butter (1/3 cup)
  • 1 cup chocolate chips
  • 1 cup chopped walnuts or any other nuts,
  • 1 cup sweetened coconut flakes or freshly grated coconut,
  • 1 tin condensed milk 300 grams

Instructions

  • Crush the biscuits into fine crumbs and add melted butter. Mix well and set it aside.
  • Preheat oven to 180 degrees C.
  • Take a medium-size baking dish (9 by 13 inches) with butter paper or greased with butter or oil and spread the biscuit and butter mixture as a base evenly. It depends on how thick you like this base to be. I prefer a thin base… you can either make a thin base or a slightly thicker one. For a thick base, use a smaller baking dish.
  • Pour a full or 3/4th can of condensed milk as a second layer and spread evenly. You can reduce the quantity according to your preference.
  • And then make even layers of chocolate chips, coconut, and walnuts accordingly. Make sure the chocolate chip layer should not be the top layer as it might burn easily.
  • Once the layers are set, it is very important to press down everything firmly so that it becomes easy to cut into bars later.
  • Bake the cookie sheet in the oven for 15 to 20 minutes or till the top layer is golden brown. Keep checking as it might get burnt if the oven temperature is high.
  • Remove from oven and cool it completely. If you start cutting even before it has cooled down…it might break into crumbs.
