As we all know that the most famous iconic sandwich joint in Mumbai called Haji Ali Juice Center is not only a sandwich hub but now has become a brand in itself. You will hardly find any Indian who does not know about this. Each sandwich they make is a masterpiece in itself. This recipe of mine is inspired by such well-known sandwich parlors.
To make my recipe different from all other sandwich recipes which you might find on google, I have introduced a simple and quick spicy red chutney which gives a slight tanginess and spice to balance the blandness of the vegetables. One more advantage in preparing this kind of sandwich is that kids will have a tough time trying to remove any vegetable from it and they will be unable to do so, as the vegetables are chopped finely. So the added advantage is that it becomes the most non-fussy and non-messy sandwich ever…everything tucked neatly between the two layers of bread…You can also substitute the chili chutney with tomato sauce when serving the kids.
Good news for mums, that the stuffing can be prepared the night before and make the breakfast and lunch box preparation a cake walk. Not only that, this sandwich is a good way of including veggies in your diet in case if you are having a tough time on that.
And if you do not have a perfect sandwich grill at home, nothing to worry. You can get the same effect even on an ordinary pan, the only thing you will miss is seeing those lovely golden grill lines.
So let us start with the making of this Mumbai Street Style Sandwich.
Bombay Style Grilled Vegetable Sandwich
Ingredients
For Sandwich:
- 16 slices of sandwich bread
- 50 grams butter or less
- 1 cup green mint chutney
- ¾ cup spicy red chutney
For Vegetable Stuffing: (mix together)
- 1 & 1/2 cup boiled & mashed potato 2 medium size potatoes
- 1 cup grated cheddar cheese
- 1 finely chopped onion
- 1 finely chopped tomato
- 1 finely chopped capsicum green bell pepper
- 1 teaspoon chat masala powder
For Green Mint Chutney: (Grind to a smooth paste)
- 2 cups chopped mint leaves
- 2 cups chopped coriander leaves
- 2 tablespoon roasted chana dal ready to eat snack type
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- 2 green chilies chopped as per taste
- 1 teaspoon tamarind pulp or 1 tablespoon lemon juice
- 1 teaspoon cumin seeds
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 to 3 tablespoon of water for grinding
For spicy red chutney: (Grind to a smooth paste)
- 1 large tomato
- 3 to 4 dry red chilies or 2 teaspoons red chili powder
- 1 teaspoon chopped garlic
- ¼ teaspoon salt
Instructions
- Preheat a sandwich toaster or a pan.
- Take 2 slices of white sandwich bread and apply green chutney on one slice and red chutney on the other slice.
- Take a big spoonful of the vegetable stuffing mixture and spread it on the slice with green chutney.
- Place the other slice on top and spread butter on the outer layer of the bread.
- Repeat steps 1, 2, 3, and 4 with the rest of the bread slices to make around 8 to 10 sandwiches.
- Now toast the sandwiches on both sides till crisp and golden.
- Serve hot.
