Corn & Apple Salad with Mustard Dressing
Ingredients
- 1 red apple
- 1 green apple
- 1 cucumber
- ½ cup tin corn kernels
- ¼ cup boiled chickpeas
- 6 cherry tomatoes or 1 small tomato cut into cubes
For dressing: (Mix together)
- 3 tbsp mustard sauce
- ½ cup olive oil
- 2 tbsp vinegar
- 1 tbsp honey
- 1 tsp crushed black pepper
- Few leaves of coriander chopped
- 1 tsp chili flakes
- Salt to taste
Instructions
- Chop apples and cucumber and place it in a large mixing bowl. Add corn, chickpeas, and tomatoes. Place it in the refrigerator until it is served.
- Just before serving add the dressing to the salad and mix well.
- Pour the contents into a serving dish.
- Serve chilled.
