Baked Beans Tacos
Baked Beans Tacos are a perfect and healthy snack. Tacos are stuffed with baked beans, crunchy salad and finally topped with cheese and sour cream.
Ingredients
- 1 Pack taco shells 12 pieces
- 1 cup grated cheddar cheese
- ½ cup Jalapeno peppers pickled / fresh
- 1 tin baked beans (small) as required
- ½ cup sour cream
- 3 tbsp of chili flakes for garnishing
- 1 cup chopped tomatoes
- 1 large cucumber
- 4 lettuce leaves
- 1 cup cooked corn kernels or tinned
- 1 cup chopped capsicum
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp sugar
- Salt to taste
- 1 tsp black pepper
Instructions
- Bake the taco shells in the oven according to the instructions on the box.
- Place a whole lettuce leaf inside the shell. (this will keep the taco from getting soggy and makes it easy to eat)
- Pour a spoonful of baked bean, followed by salsa/salad, jalapenos and finally grated cheese.
- Top it with a tsp of sour cream and chili flakes.
Notes
Note:In the case, if the taco shells are broken then you can make a nacho salad by using the same ingredients mentioned above.
