Baked Beans Tacos are a perfect and healthy snack. Tacos are stuffed with baked beans, crunchy salad and finally topped with cheese and sour cream.

Ingredients
  

  • 1 Pack taco shells 12 pieces
  • 1 cup grated cheddar cheese
  • ½ cup Jalapeno peppers pickled / fresh
  • 1 tin baked beans (small) as required
  • ½ cup sour cream
  • 3 tbsp of chili flakes for garnishing
  • 1 cup chopped tomatoes
  • 1 large cucumber
  • 4 lettuce leaves
  • 1 cup cooked corn kernels or tinned
  • 1 cup chopped capsicum
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • Salt to taste
  • 1 tsp black pepper

Instructions
 

  • Bake the taco shells in the oven according to the instructions on the box.
  • Place a whole lettuce leaf inside the shell. (this will keep the taco from getting soggy and makes it easy to eat)
  • Pour a spoonful of baked bean, followed by salsa/salad, jalapenos and finally grated cheese.
  • Top it with a tsp of sour cream and chili flakes.

Notes

Note:In the case, if the taco shells are broken then you can make a nacho salad by using the same ingredients mentioned above.
