Banana Bread
Ingredients
- 125 grams butter at room temperature/soft)
- 1 cup castor sugar
- 2 cups flour
- 2 eggs
- 3 large ripe bananas mashed
- 1 tsp vanilla essence
- 1 tsp baking powder
- ¼ tsp baking soda
Instructions
- Preheat oven to 180 deg C.
- With a cake beater beat butter and sugar together till fluffy and light. Add eggs one at a time and beat well.
- Add bananas and vanilla, mix well .
- With a ladle mix in flour, baking powder, and baking soda. Pour the batter into a greased loaf tin and bake for 30 to 40 min.
- When the bread is done, cool it for 15 min and then slowly make slices with a serrated knife. (if you start making slices when it is hot, it may crumble)
- Tips: If you do not have castor sugar, take regular granulated sugar and grind it in a spice grinder to a fine powder. Mash bananas just before adding to the batter.
