Penne Polo-e-Curry ~ Pasta in Creamy Sauce
Ingredients
- 2 cups pasta Penne
- 1 cup boneless chicken cubed
- ½ cup red capsicum optional
- ½ cup green capsicum
- 10 basil leaves 1/2 teaspoon dried basil leaves
- 1 tablespoon curry powder (or
- ¾ cup cream
- ¼ cup milk more if needed
- 2 tablespoon butter
- Salt to taste
Instructions
- Boil pasta in salted water till al dente (remove pasta when it slightly sticks to teeth). Strain and set aside covered.
- Heat butter and add chicken. Cook chicken with salt till done.
- Then add capsicum, basil leaves, curry powder and cook for sometime.
- Add cream, mix well and check the seasoning. Cook for 2 min with lid on low flame.
- Now add cooked pasta and stir well till well combined with other ingredients. Always use a wide and big size pan so that stirring is easy without breaking the pasta.

If you want a spicier version of this pasta then add more curry powder.
If pasta dries out too much after adding cream then add some water in which pasta was cooked.
Keep pasta and sauce separately. Just before serving add pasta to the sauce on medium heat and stir well.
In case you do not have basil, can use any other herb like dry oregano or fresh coriander leaves.
You can also add mushrooms.
