Most people staying in Middle East countries are familiar with this dish. It is my favorite too. Arabic bread known as Khubz is stuffed with a mix of mince with some Arabic spices and grilled. I feel it is a healthy option (better than deep-fried food). Give it a try and later you can use your own imagination and creativity to suit your taste buds. For example, You can stuff a Chapli kebab or Shami kabab mixture to give it an Indian or Pakistani taste.
Arayes (Stuffed Pita bread)
Ingredients
- 500 grams of meat mince mutton or beef
- 1 large onion chopped
- 1 small tomato finely chopped
- 2 cloves garlic chopped
- 1 teaspoon salt
- 1 teaspoon Baharat powder Arabic spice
- 1 cup freshly chopped parsley or coriander leaves
- 5 tablespoon lemon juice
- 5 teaspoon olive oil
- 4 khubz small size
- 1 onion sliced
- 1 firm tomato sliced
- 1 tablespoon red chili flakes optional
Instructions
- In a chopper add mince, onion, tomato, garlic, salt, Arabic spice, parsley, lemon juice and salt and chop into a fine mixture. (this step is important because only then the mince will actually get cooked well). If you don’t have a chopper you can use the dry grinder of your mixer. Preheat a grill pan.
- Take bread and separate the two layers and spread the mince mixture into a thin layer on one of the bread layers. Keep some slices of onion and tomatoes over the mixture and sprinkle red chili flakes if you want it spicier.Drizzle some olive oil and place the second layer and press with your hands so that both the layers stick well.
- Place the stuffed bread on the grill pan and cook with a lid over it. Cook on both sides for 5 min each on low flame.
- Serve hot with Hummus, moutabbal, or Tahina sauce.
