Mixed vegetable and egg frittata is a protein-packed breakfast casserole. You can combine and bake the vegetables of your choice along with spices and eggs all in one pan.
Baked Vegetable Frittata
Ingredients
Whisk together
- 4 eggs
- ½ cup milk
- 2 tablespoon cream
- ¼ teaspoon black pepper
- Salt
Other Ingredients :
- ½ cup boiled potato cut into small cubes
- ¼ cup blanched and cubed carrots
- 2 tablespoon blanched green peas
- 2 tablespoon chopped green capsicum
- 2 teaspoon grated garlic
- 2 green chilies chopped
- ½ cup finely chopped onion
- 2 tablespoon butter
- ½ teaspoon curry powder
- Salt
Instructions
- Preheat the oven to 200 deg C.
- Heat the 6 ” frying pan and add butter with some drops of oil.
- Add garlic and onion and fry till soft.
- Now add green chilies, all the veggies, curry powder, and salt.
- Cook for 2 minutes till the spices are combined with veggies.
- Lower the heat and add the whisked egg mixture. Mix well, place the lid and cook on low flame till the base is set. This will take about 4 minutes.
- Once the base is set, place the same pan on the top most rack in the preheated oven close to the flame with its handle outside and let the oven door be open. We just need to cook and set the top part of the frittata. Leave it in the oven for about 5 min .
- With help of a knife check if its fully cooked and firm from indside. once done cut into wedges and serve hot with chilli sauce.
